Features of suckling lamb production technology in the North Caucasus Region

To improve the meat qualities of sheep of the North Caucasian meat-wool semi-fine wool breed (SK) and accelerate the achievement of proper slaughter conditions during the suckling period, they were crossed with sheep-producers of meat-and-tallow breeds of Hissar (GS×SK) and Edilbaevskaya (Ed×SK). It was found that, on average, during the summer-autumn pasture period, the daily increase in cross-bred boulders was 173-165 g, in sheep - 220-218 g or 48.46% more in cross-bred. Among crossbred animals, the highest meat productivity was obtained by crossing SC×GS. Before feeding, the mass of muscle tissue in the carcass was 10.6-10.7 kg or 75-77% of the carcass weight, then after feeding, its mass in the group of rolls was equal to 13.7 kg, in the group of sheep - 20 kg or 78 and 80.3% of the carcass weight, respectively. The meat of the rolls contained more fat and its caloric content was higher than the meat of the rams by 117 kcal or 13%.
