Qualitative characteristics of beef from dairy cattle breeds depending on the maturation period

The presented research results are devoted to the study of the qualitative characteristics of beef de-pending on the maturation period of the Holstein cattle breed. To study the questions, 3 groups of experimental animals were selected, gobies raised according to the traditional technology developed in this farm, gobies raised according to intensive technology and castrated gobies. During the experiment, average samples of meat samples at 5, 10, 15 and 21 days of maturation were studied. The reaction of the medium, the chemical composition were determined, and an organoleptic assessment was carried out. The chemical composition was the most preferable from the point of view of biological value for beef of the II experimental group, but the consumer evaluation of meat indicates the ad-vantage of castrated bulls of the III group of animals, the meat of the latter after cooking was the best according to the score, on average by 0.2-0.4 points. The meat of the Holstein castrate bulls was closer in its properties to the meat of meat breeds of cattle. As an alternative to scarce beef from beef breeds of cattle, we recommend replacing it with beef from castrated bulls of the Holstein breed of cattle.
