The structure of beef pulp from steers and castrates, suitable for the production of canned meat for children

The aim of the research was to study, in a comparative aspect, the histological picture of tissue sections of the longest back muscle from 18-month-old slaughter bulls and Kalmyk castrates to compare the suitability of beef for the production of canned meat for children. In a comparative histological study of the longest back muscle in 18-month-old calves and castrates of the Kalmyk breed, castrates showed visually more adipose tissue compared to calves. In the connective tissue of M. longissimus dorsi, there was a moderate amount of collagen and elastin fibers in both gobies and castrates. Histological studies found that the longest back muscle of castrates contained significantly less muscle (86.7%) and more adipose tissue (11.1%) than in the muscle of non-castrated bulls, 94.6% and 3.6%, respectively. Kalmyk bulls differed from castrates in the best microstructure of the longest back muscle: muscle tissue was characterized by a large number of muscle fibers per unit area by 10.9% and a smaller diameter of muscle fiber by 3.5 microns (p<0.01).
