Studying variability of rice varieties by amylographic characteristics of grain starch due to application of different doses of nitrogen fertilizers during cultivation

The article presents an assessment of rice varieties by the main biochemical and physico-chemical quality traits, depending on the doses of nitrogen fertilizers. The amylose content was determined according to GOST ISO 6647-2-2015, the amylographic characteristics of the starch dispersion of rice grains were recorded using a Brabender micro viscoamylograph. With an increased dose of nitrogen in varietyRodos, the amylose content decreased by 1.1%, while in varieties Flagman and Piruet, it increased by 1.4% and 0.8%, respectively. In the standard variety Flagman there was a decrease in all the studied amylographic characteristics at N120 (by 23, 49 and 27 U. Br., respectively). Varieties Virasan and Sukhodol did not have significant changes in amylographic characteristics. The maximum viscosity of these varieties varied from 444 to 447 U. Br. and from 465 to 469 U. Br. respectively. Viscosity at the end of the cooling period from 732 to 740 U. Br. and from 769 to 780 U. Br., viscosity gradient from 335 to 340 U. Br. and from 351 to 358 U. Br. At higher doses of nitrogen fertilizer, the maximum viscosity and viscosity gradient of variety Piruet slightly decreased by 5 and 7 U. Br, respectively, and the viscosity at the end of the cooling period decreased by 19 U. Br. In variety Rodos there was a rather pronounced decrease in the indicator “viscosity at the end of the cooling period”, this parameter decreased at N120 from 714 to 677 U. Br. The maximum viscosity of this variety at N60 was 18 units higher, the viscosity gradient was 6 units higher.Varieties Virasan and Sukhodol were quite stable in all studied indicators. The Flagman standard and Piruetvarieties showed some regularity: with an increase in the nitrogen dose, the amylose content increased, and all viscosity parameters decreased. The variety Rodoswas an exception, its amylose content decreased, however, in terms of viscosity, a decrease was observed in all respects.
