Promising peach cultivars for processing

The peach is notable for its excellent taste, dietetic and curative properties, presents a broad range of ripening times and is in great demand in the market. The article presents the results of research on processing properties of peach cultivars with gristly and dense fibrous flesh. Conducted experiments comprised the manufacturing of compotes, succades, dried fruits and jams. Maximum overall tasting values (4.5-4.7 points) were assigned to compotes from cultivars Uspekh and Russkiy Bogatyr. Best succades have been given by cultivars Vostok-3 (4.7 points) and Uspekh (4.5 points). Good score (4.2 points) had dried fruits of cultivars Russkiy Bogatyr, Glinka, Zefir. Dried fruits with skin had a lower quality (3.8 points). A high score (4.6 points) was given to peach jam, a jelly product, made from cultivars Vostok-3 and Russkiy Bogatyr. The samples had very sweet taste with a honeylike note and amber-like color. According to a complex of values, the highest content of biologically active substances had compote from cultivar Lebedev, dried fruits of cultivar Vostok-3, succades from cultivars Vostok-3 and Bogatyr. Conducted research allowed to select cultivars suitable for manufacturing of conservation products with maximum content of biologically active substances as well as with a high taste value: Uspekh, Vostok-3, Russkiy Bogatyr, Glinka, Zefir.
