Interrelation of nutrient values with rice pericarp color

The article presents the characteristics of domestic rice varieties with colored pericarp (red and black), as natural sources of antioxidants: Mavr, Gagat, Ryzhik, Cardinal. According to their content, black and red rice varieties exceed 20 times the white varieties. Black rice-according to FAO experts-Super food of the 21st century, as 50 g of it provide 35% of the recommended daily norm of selenium, copper, zinc, and manganese in their content, it exceeds the white rice by 5-8 times. By the number of antioxidants, black rice is not inferior or exceeds such products as blueberries, red wine and red grapes, strawberries, red cabbage, red onion and red orange juice, but the price of its production is much lower, which will allow it to be consumed in sufficient quantities for recovery to all segments of the population. Varieties with colored pericarp have antitumor properties, strengthen the circulatory system and prevent changes in the structure of DNA. The content of nutrients of rice are in the following order: the concentration of iron - black rice > brown rice > red rice; zinc - red rice > black rice > brown rice; copper - black rice > brown rice > red rice. The varieties of rice, created by Russian scientists, can completely or partially replace imported ones, which will reduce the price of their rump and will allow to increase nutrition balance of the Russian population.
