Increasing the nutritional value of agricultural products - establishment of the health food industry

The review discusses promising directions of rice breeding for quality in Russian Federation. Special attention is paid to red-grain and black-grain rice as a natural source of antioxidants. The characteristic of native red and black-grain rice varieties developed recently is given. Special attention is paid on red and black rice as on a natural source of antioxidants. The most powerful natural antioxidants are flavonoids (anthocyans). Black rice contains the largest number of antocyans - 2283 mg / g. Epidemiological and clinical studies have confirmed that the black rice consumption reduces the risk of cardiovascular diseases, gastrointestinal tumors, type II diabetes, premature aging, problems in the sexual sphere, and other dangerous diseases. Red rice varieties are sources of bioavailable carotenoids. In recent years in the institute (FSBSI "ARRRI") domestic varieties of black-grain and red-grain rice with high content of antioxidants have been developed: Mavr, Gagat, Ryzhik, Yuzhnaya Noch, Rubin, Mars. Developed by Russian scientists these varieties can partially or completely replace imported ones, which will reduce the price of their grain and will increase the balance of diet of the Russian population. These exclusive varieties of rice allow to create competitive import varieties, which will reduce the price of their rump and will increase the balance of power of the Russian population.
